Baking Soda Cooking Trick

My friend, Tomo, recently told me about a cooking trick she learned. You can make pasta noodles taste like ramen noodles by adding baking soda to the boiling water when you are cooking the pasta. Have any of you heard about this?

Of course, I had to give it a try. I had a small amount of Thin Spaghetti in the cupboards and added a heaping tablespoon of baking soda to the boiling water. Be careful to make sure you left room at the top of the pot. It foams up quickly when you add the baking soda. Guess what? It tastes just like ramen noodles! The baking soda somehow changes the texture of the pasta. It was delicious. (Sorry for the crappy cell phone picture. It was all I had at the time. And I was anxious to eat it.)

It is best to use a thin pasta noodles, like thin spaghetti or angel hair. Tomo also suggest adding a few minutes of extra cooking time. So if your box of pasta says to cook it for 12 minutes, you may want to cook it for 15 minutes. A recipe is not needed, but I know a lot of people feel more comfortable with a recipe. I searched the internet and the only thing that came up this how to guide. If anyone tries it, let me know how you like it.

Your soup looked so delicious that I was inspired to try it as well. I tried the noodles in a Hot and Sour soup, and I was really pleased with how both turned out. Thanks for sharing!
