You would think that I had enough baking for a while after the Wedding Cake. But it's DH's birthday, so we must celebrate it with a cake. Even though his birthday is today, we ate the cake with all of our friends on Saturday.
It's called Lindy's Strawberry Shortcake, but it's not a shortcake. The recipe is from the book, Arthur Schwartz's New York City Food. Two layers of sponge cakes sandwiching a layer of whipped cream and strawberries, what's not to like? The whipped cream frosting is stabilized with gelatin which was a new technique for me to try. I should have pulled out my stand mixer, but was too lazy and so it was bit tricky using the hand held mixer while trying to drizzle in hot melted gelatin. It was delicious. The whole thing tasted so light and heavenly. Whipped cream frosting rocks!
Have a great Thanksgiving everyone! We are heading to Massachusetts to spend Thanksgiving with both of our families. I am not baking or cooking for Thanksgiving this year because I am taking a much needed break from the kitchen.

When I first learned about stabilizing whipped cream with gelatin, I thought it was a revelation. I wanted to put whipped cream on everything. :)
