Cake Assembling

Remember the Wedding Cake I mentioned a few weeks ago? Well, the wedding is tomorrow, so it's show time. The cake is finished and all I have left is the decorating. The above photo shows the 3 tiers that has been covered with fondant and is assembled. The bottom tier is 12 inches and has 2 layers of cake. The middle tier is 9 inches and has 3 layers of cake. And the top tier has 2 layers of cake, but I don't remember the diameter size off the top of my head.

Covering a cake with fondant is hard! I have never done it before, so I started with the top tier and worked my way down. The 12 inch bottom layer proved to be too much for one person to handle. I had to call on DH to help me get the fondant on the cake. While I started cutting off the excess fondant off the bottom, he used the Fondant Smoother to smooth and shape the fondant on the cake. Did I mention that you have only 5 minutes to work with it before it starts to dry? Plus it tears and stretches easily.

The bottom and middle tiers have many dowels running through them to support the tiers above. That part was not hard. And after a day, the cake is still standing so I am sure I did it correctly. :-)The bride's wedding theme is Fall, so we thought leaves would be appropriate for the decorations. The leaves are made out of gum paste. You have to make the gum paste 24 hours in advance before you can use it. Gum paste is white, so I tinted them with food colored gel paste. After you cut and shape them, it has to be left out to dry.I still have to make the royal icing to pipe some decorations on the cake. And then there is the "gluing" of the leaves. The bride had no specifications about what the cake should look like, so most of it is up to my vision. Wish me luck. I am worried about delivering it to the restaurant in one piece. Hopefully, I will have some nice photos of the finished cake to show you guys.

Ooooh, I can't wait to see. Well done with what you've done so far, it looks great (I know fondant is tricky, but it looks and tastes soooo good). Good luck with the finishing/decorating.

Wow, I gotta say I'm super impressed with your cake making skills! I've worked a teeny tiny bit with fondant before just for a cake for my son here at home for fun, but nothing compared to this! I can't wait to see the finished product :) I hope you're not working too hard, and taking plenty of breaks. (Sorry,I have to nag mother's to be about these things, LOL--it's just in my nature ;)

Everything looks perfect in your photos. I'm going to assume that this is a lot harder than it looks and that you are ten times more patient than I am. I'm impressed!
